Why Juice Changes Color: What Is the Barrier Layer Really Blocking?

Every summer, one of the biggest headaches for juice factories is not raw material supply, but a very familiar problem: the juice goes into the package looking perfectly fine, but after two or three months the color starts to change.

VC oxidation, browning, and flavor loss may look like different issues, but at the core they are often the same thing:  oxygen has entered the package .

This article is not about solutions just yet. Before talking about what to use, it is more important to understand what “barrier” actually means. Many buyers choose packaging based on price alone, but very few ask the real questions: What does the barrier layer actually block? What is the difference between different barrier materials? And why can a more expensive package sometimes perform less consistently in humid conditions?

It Is Not About Having a Barrier, but How Much It Blocks

Almost all flexible packaging has some level of barrier performance. The real difference lies in  how much  barrier performance it provides.

The key indicator is OTR, or oxygen transmission rate. The lower the OTR, the stronger the package is at blocking oxygen. In simple terms, a low-OTR package helps keep VC from escaping and prevents outside oxygen from getting in.

For juice packaging, the most common structures can generally be understood in the following way:

PA/PE structure: medium barrier

This is a more basic option, with OTR often ranging from several dozen to over one hundred. It is suitable for juices that are less sensitive to oxidation, or for products with shorter shelf life and cold-chain storage. Its advantages are transparency and lower cost, but it is not designed for long-term freshness protection.

VMPET structure: high barrier

This structure adds a metallized PET layer, and its OTR can be reduced to below 1. It is currently one of the most widely used solutions in the juice industry. NFC juice, concentrated juice, and pulp products all use this type of packaging. It can generally support stable quality for 6 to 12 months at room temperature, which makes it one of the best options in terms of both performance and cost-effectiveness.

EVOH structure: very high barrier, but not stable in all environments

EVOH is a highly effective barrier material, and in theory it can deliver excellent oxygen protection with an OTR below 0.5. However, it has one major weakness:  it is sensitive to moisture . When humidity rises, EVOH can absorb water, swell, and lose barrier performance sharply. This is especially important in fruit production seasons, which often coincide with hot and humid weather. That is why some customers feel they are using the most expensive bag but still do not get stable results.

ConstBarrier film: high barrier with humidity stability

Our self-developed ConstBarrier film uses a proprietary barrier layer instead of the traditional EVOH layer. It maintains stable high oxygen-barrier performance even under hot and humid conditions, with OTR below 0.3. It is designed for products with extremely high VC content, such as sea buckthorn juice, rose hip juice, and blueberry juice.

The Real Weak Point of Barrier Materials: Humidity

One of the most overlooked facts in packaging is that  barrier performance is not fixed . It can be affected by the surrounding humidity.

EVOH is the clearest example. In dry conditions, its performance is excellent. But in real juice factory environments, especially during summer production seasons, humidity is often much higher. On top of that, storage and transport may involve fluctuating temperature and moisture levels. In those conditions, EVOH’s barrier value can change — and many manufacturers do not even notice.

That is where ConstBarrier becomes valuable.

Its advantage is not simply that it offers “better barrier than EVOH,” but that its oxygen-blocking performance does not drop in high humidity. For juices with higher VC content, this stability is especially important.

The Product Ladder: The Most Expensive Is Not Always the Best Fit

To be practical, not every juice product needs ConstBarrier film.

For many standard juices, VMPET metallized bags are already enough. They offer a good balance of cost and performance, and a 12-month shelf life is very achievable. In fact, this is the product line we ship most often.

We once worked with a juice brand that initially came to us specifically for ConstBarrier. After discussing their product type and shelf-life target, we found that they were producing a medium-temperature product with a 6-month shelf life. VMPET was fully sufficient, which saved them budget while still meeting their quality requirements. They are now a stable long-term customer.

When should ConstBarrier be considered?

  • For juices with extremely high VC content, such as sea buckthorn, rose hip, blueberry, or kiwi juice.
  • For products requiring shelf life of 12 months or more.
  • For production or storage environments with high humidity.
  • For premium brands that cannot tolerate quality fluctuations.

When is VMPET enough?

  • For standard juice, pulp, or concentrate.
  • For products with 6 to 12 months shelf life.
  • For cost-sensitive products.
  • For brands that focus on volume and efficiency.

Choosing packaging is not about buying the most expensive option. It is about buying the most suitable one.

It is much like choosing a car: not everyone needs an off-road vehicle. A sedan can work perfectly well if it fits the road conditions.

During Fruit Season, Is Your Packaging Ready?

Every year from July to October, fruit production reaches its peak — and so does humidity. If your juice product is showing the problem of “it looks fine at first, but changes color after a few months,” the issue may not be the formula itself. It may be that the barrier solution was not properly matched to the product and the environment.

For juice factories, packaging is not the last step in the process. It is one of the key factors that shapes supply chain stability. With 24 years of experience in liquid flexible packaging, we have learned a simple lesson:  it is always better to clarify the barrier requirement first, and talk about price later.
